Emmental Apple Roesti (Emmentaler Öpfuröschti)
This used to be a very popular meal, since the ingredients were usually to hand and the preparation is very simple. The recipe comes from the Emmental in Canton Bern, the home of the famous cheese.
Ingredients for four people: - 11oz bread (need not be fresh)
- 1 3/4 lb apples
- butter
- sugar
- cinnamon
Method - Cut the bread into bite-sized pieces
- Melt some butter in a skillet, brown the bread pieces in it, then set them aside
- Cut the apples into chunks. You may peel them or not, as you choose
- Caramelize the apples with butter and sugar in a pan, and then add a little water and cook them until they start to go soft
- Mix in the bread, an reheat briefly
Serve with sugar and cinnamon to taste.
